In a pan, mix water and 0.75 cups of sugar. Heat on high, stirring with a fork until the sugar dissolves. Then, cook without stirring for 4-5 minutes until caramel color. Finish cooking by gently shaking the pan for 1-2 minutes to achieve a uniform caramel. Remove from heat and carefully add the cream. Return to heat and stir until the mixture is smooth.
- Water: 0.3 glass
- Sugar: 1 glass
- Cream 48%: 1 glass

Mix 0.5 cup of milk and starch. In another bowl, beat the eggs with vanilla and salt.
- Milk: 3 glasss
- Cornstarch: 0.3 glass
- Chicken egg: 2 pieces
- Vanilla: 1.5 teaspoon
- Salt: 0.3 teaspoon

Add the remaining 2.5 cups of milk to the caramel and bring to a boil, whisking constantly. Then introduce the starch mixture into the caramel. Bring to a boil again, whisking constantly, and cook for 2 minutes while whisking.

Add about 1 cup of caramel mass to the whipped eggs, mix well, and pour everything back into the caramel. Whip for another minute off the heat.

Add crushed chocolate to 0.5 cup of caramel and mix until smooth.
- Dark chocolate: 60 g

Divide chocolate caramel into 6 glasses or bowls, then add simple caramel mass, and then again chocolate. Chill for 3 hours. Decorate with chocolate crumbs.
