Pour the cream into a pot and bring to a boil. Remove from heat and cool for 10 minutes.

Meanwhile, melt 200 grams of chocolate in a water bath. Remove from heat and add another 60 grams. Mix well and add cream. Place in the refrigerator for about 3 hours to set.

Line a large plate with parchment. Take 2 teaspoons of chocolate dough and shape into balls. Place on the prepared plate. Refrigerate for 1 hour.

Line one more dish with parchment. Melt the remaining chocolate in a water bath, remove from heat, and let it cool slightly.

Take a small amount of warm chocolate in your hands, then take 1 truffle and gently roll it in your hands. Place it on a plate. Repeat the same with the remaining ones. Optionally, roll in cocoa powder before placing on the baking sheet. Chill for 1 hour.
