Cut the vanilla pod lengthwise into two parts, scrape out the seeds with a knife. In a bowl, mix mascarpone, powdered sugar, whipped cream, and vanilla seeds.
- Mascarpone cheese: 500 g
- Powdered sugar: 100 g
- Whipped cream: 200 ml
- Vanilla pod: 1 piece

Mash 50 g of strawberries, transfer to a saucepan and place on the heat, pour in vinegar, add sugar, add honey, and reduce to a thick consistency. Remove from heat, add butter and halved remaining strawberries.
- Strawberry: 500 g
- Balsamic vinegar: 100 ml
- Muscovado sugar: 1 tablespoon
- Honey: 1 teaspoon
- Butter: 50 g

Roll out puff pastry to a thickness of 3 mm, place it in a mold, brush the edges with egg, line the bottom with parchment, add dry beans (or other legumes) and bake for ten minutes at 190 degrees. Remove the beans, parchment, and return to the oven for another five minutes. Take out and cool.
- Puff pastry: 500 g
- Chicken egg: 1 piece

Spread mascarpone on the cooled dough, then top with marinated strawberries.
