Apple pie with caramel pecans

The recipe was shared with us by the brand chef of the Sapiens restaurant Ilya Blagoveshchensky.

Prepare shortcrust pastry. Mix 150 grams of wheat flour and 50 grams of almond flour. Add 0.5 teaspoon of baking soda, the same amount of salt and baking powder, 200 grams of sugar, lemon juice, and vanilla extract.
- Wheat flour: 525 g
- Almond flour: 95 g
- Soda: 4 g
- Salt: 7 g
- Baking powder: 2 g
- Sugar: 600 g
- Lemon juice: 6 ml
- Vanilla extract: 4 ml

Pour 150 ml of water and vegetable oil. Knead the dough until smooth.
- Water: 450 ml
- Vegetable oil: 80 ml

Prepare spiced apples. In a saucepan, add 200 ml of water, 200 grams of sugar, and a pinch of cinnamon. Boil until syrup consistency.
- Water: 450 ml
- Sugar: 600 g
- Ground cinnamon: pinch

Slice the apples into thin long slices and dip them in syrup. Lay the apples overlapping on parchment and carefully roll them into a log. Cut in half.
- Apple: 1 kg

Line the baking pan with foil and carefully transfer the dough there.

Place apple rolls on top of the dough. Send to a preheated oven at 180 degrees for 20 minutes.

Prepare almond crumble. Mix powdered sugar, 45 grams of almond flour, 50 grams of sugar, a pinch of salt, 375 grams of wheat flour, butter and add 1 egg.
- Powdered sugar: 120 g
- Almond flour: 95 g
- Sugar: 600 g
- Salt: 7 g
- Wheat flour: 525 g
- Butter: 230 g
- Chicken egg: 60 g

Knead the dough and spread it on a baking sheet lined with parchment. Bake at 175 degrees for 15 minutes. Remove from the oven and cool. Break into large crumbs by hand or using a blender.

Next is pecans in caramel. In a thick-bottomed saucepan, melt 150 grams of sugar and bring it to a caramel state. Add the pecans to the saucepan and mix. Quickly pour onto a silicone mat, cool, and cut as desired.

Place the warm apple pie on a plate.

Sprinkle the crumble nearby.

Place a scoop of vanilla ice cream on top.
