Put raisins in a small bowl and soak in whiskey or bourbon for 15-20 minutes. Grease a 25 cm diameter springform pan. Preheat the oven to 180 degrees.
- Raisin: 3 tablespoons
- Whiskey: 2 tablespoons

Place the sponge disk at the bottom of the mold. Drain the raisins and sprinkle the sponge with the remaining alcohol. Mix 200 g of sugar with starch.

Peel 10 small bananas. Melt butter and 2 tablespoons of sugar in a pan, fry the bananas until they are coated with a caramel crust. Cool and slice into rings.

In another bowl, place the cheese, add vanilla, lemon zest, juice, raisins, eggs, and cream. Mix, add the dry ingredients and half of the bananas, mix everything, and pour the mixture into a mold.
- Philadelphia cheese: 850 g
- Vanilla essence: 1.5 teaspoon
- Lemon: 2 pieces
- Raisin: 3 tablespoons
- Chicken egg: 3 pieces
- Cream 30%: 350 ml
- Cornstarch: 4 tablespoons
- Bananas: 10 pieces

Pour 2–3 mm of warm water into the baking tray and place the mold on it (the water will create steam during baking). Bake for 50 minutes to 1 hour until golden brown. The filling in the middle should remain slightly liquid. Remove from the oven and let cool without removing from the mold.

Remove the cheesecake from the mold, cut into pieces, decorate with remaining bananas, drizzle with maple syrup or honey, and serve. You can garnish with mint leaves.
