Wash the celery stalks, remove the leaves, break them, and remove the fibers.
- Celery: 350 g

Wash the lemon and lime, cut them, remove the seeds. Chop the celery, lemon, and lime in a blender without removing the citrus peel.
- Lemon: 150 g
- Lime: 100 g

Place in a pot, sprinkle with sugar, add vanilla sugar. Let the mixture steep for 3-4 hours until the future jam releases juice.

Cook in three stages (first bring to a boil, set aside for 1 hour, then continue cooking, and do this three times until ready) to allow the jam to absorb.

Pack the ready jam into jars. Let the sweetness rest for a few days - then it's ready to eat!
