Berry gratin is a refined treat inspired by the Latin American cuisine's passion for rich flavors and vibrant colors. Its history roots from the French 'gratin,' but here it takes on a fresh, sweet note thanks to raspberries. A delicate cream made from milk, egg yolks, and cream gives the dish a velvety texture, while the baked sugar crust adds a crispy contrast. During baking, the berries release their aroma, creating a harmony of sweetness and slight tartness. The gratin is served hot; its melting texture provides true delight. Perfect as a dessert for a festive dinner or an elegant conclusion to a meal.

In a small saucepan, bring the milk to a boil and remove from heat. Whisk together the yolks, 1 cup of sugar, and starch. Continue whisking until you get a smooth light yellow mixture. While continuing to whisk, gradually add the boiled milk by the teaspoon, then in larger amounts. Once all the milk is added, place the mixture over low heat and keep stirring until it reaches a thick creamy consistency.
