Baskets with custard caramel cream and strawberries

Recipe from Irina Chadeeva's book "Pie Science for Beginners". Here, only the egg white is used in the dough recipe, without the yolk, so the baskets turn out very smooth and strong enough, so that they can be easily removed from the molds without damage.

To prepare the dough, mix soft butter with powdered sugar (100 g) and egg white into a smooth creamy mass. Add flour (100 g) and mix into crumbs.
- Butter: 100 g
- Powdered sugar: 120 g
- Egg white: 1 piece
- Wheat flour: 220 g

Combine the crumbs into a lump, divide the dough into six equal parts, and shape them into molds with your hands.

Bake at 200 degrees for 13 minutes, the baskets should not brown too much. Cool them for 10-15 minutes and remove from the molds.

For the cream, melt sugar in a saucepan. Without stirring, just shaking the pan, wait until it melts and turns into brown caramel.

Reduce the heat and carefully pour 1-2 tablespoons of boiling water into the caramel; the mixture will foam, so stir until the caramel dissolves. Gradually add hot cream and mix well. Heat the mixture over low heat until any pieces of caramel (if present) dissolve.
- Cream 20%: 200 ml

Measure the volume of the mixture, pour it into a measuring cup (be careful, the mixture is very hot!) and add milk to make 250 ml. Add vanilla or vanilla extract. Pour into a saucepan and bring to a boil again.
- Milk: 50 ml
- Vanilla: to taste

Meanwhile, whisk the egg yolks with the remaining powdered sugar and flour in a deep bowl. Pour in the hot cream syrup and mix well. Transfer the mixture to a saucepan and cook until thickened, stirring vigorously.
- Egg yolk: 2 pieces
- Powdered sugar: 120 g
- Wheat flour: 220 g

Cool the cream first at room temperature, then in the refrigerator, transferring it to a bowl and covering it with plastic wrap (you can also pour a spoonful of milk on top). Before serving, whip the cream and distribute it into baskets.

Top with sliced strawberries.
