Sweet khachapuri with berries and cream cheese

Mix flour, yeast, sugar, and salt in a bowl.
- Wheat flour: 500 g
- Dry yeast: 10 g
- Sugar: 10 g
- Salt: 10 g

Boil the milk, dissolve the butter in it, and let it cool slightly.
- Milk 3.2%: 300 ml
- Butter: 100 g

Add milk and butter to the dry mixture. Mix thoroughly until a thick, homogeneous texture without lumps is achieved.

Gather the flour into a mound, pour in the milk mixture with yeast. Knead the dough until it is pliable and smooth.
- Wheat flour: 500 g

Cover the dough with a towel and let it rise in a warm place for one and a half hours.

When the dough rises, divide it into four parts. Roll each part into a thin flatbread and fold to make a rim.

Place a quarter of cream cheese in the center of each flatbread and spread it with a spatula.
- Mascarpone cheese: 500 g

Whisk the egg and brush the edges of the khachapuri with it.
- Chicken egg: 1 piece

Bake the khachapuri in a preheated oven at 250 degrees for 10-15 minutes.

Place raspberries on the ready khachapuri, sprinkle with powdered sugar through a sieve, and decorate with mint.
