Lobiani

"Lobio" in Georgian means "beans", and lobiani is the same khachapuri, but with beans. Bacon is also added to Racha lobiani. It is important not to turn the beans into mush, but to leave a few beans that are not completely mashed: this will add seriousness and expressiveness to the filling. If you do not have time to boil the beans, you can use canned ones.

Soak the beans overnight, then drain the water, cover them with fresh water so that it rises 2 fingers above the beans, and cook on low heat with a lid until soft. This will take about 2 hours, depending on the type and size of the beans.
- White beans: 300 g

Mix flour, sugar, a teaspoon of salt, and yeast, then add an egg, 90 ml of vegetable oil, and matsoni.
- Wheat flour: 400 g
- Sugar: 1 teaspoon
- Salt: to taste
- Dry yeast: 6 g
- Chicken egg: 1 piece
- Vegetable oil: 110 ml
- Matsoni: 250 ml

Knead the dough until it doesn't stick to your hands. Place it in a bowl, cover with plastic wrap or a towel, and put it in a warm place for one to one and a half hours.

Heat vegetable oil in a pan, fry crushed garlic cloves for a minute, then remove them and add diced onion to the pan until slightly golden.
- Vegetable oil: 110 ml
- Garlic: 2 cloves
- Onion: 1 head

Drain the water from the beans, leaving a little for moisture. Mash the beans with a potato masher without worrying about making it completely smooth; it's even better if some beans remain whole. Add khmeli-suneli, chopped cilantro, 50 grams of butter, sautéed onions, salt and pepper to taste.
- Khmeli-suneli: to taste
- Coriander: 40 g
- Butter: 120 g
- Onion: 1 head
- Salt: to taste
- Ground black pepper: to taste

Divide the dough into three equal parts and roll them into balls. Grease the working surface with oil, flatten a ball of dough into a small pancake with your fingers, and place a third of the bean filling on it. Gather the edges of the dough to the center and carefully but thoroughly pinch it closed. Try not to leave any air inside.

Preheat the oven to 250 degrees. Grease the baking tray with vegetable oil.
- Vegetable oil: 110 ml

Place a stuffed flatbread on it and start flattening it with your hands into a round shape, moving from the center to the edges. Make several holes in the prepared lobiani with a fork and send it to the oven for 10 minutes.

Brush the finished lobiani with melted butter.
