Lace pancakes with Nutella® and berries

Lacy pancakes with Nutella® and berries are a refined treat that combines the tenderness of traditional Russian pancakes with the delightful sweetness of hazelnut-chocolate cream and the freshness of berries. These airy, thin pancakes acquire a lacy texture through a special cooking technique, making them light and delicate. Historically, pancakes hold an important place in Russian cuisine and are often served during Maslenitsa — the festival welcoming spring. Paired with Nutella®, they become a modern gastronomic delight where the rich flavor of hazelnuts and cocoa perfectly complements the soft layers of dough. Fresh berries add a note of sweet-tart freshness, making the dish balanced and appealing for both breakfast and cozy family tea time.

1
Whisk the eggs with salt using a mixer until a white foam forms. While continuing to whisk, pour in hot water; the foam should increase 3-4 times. Without stopping the mixer, add cold milk. Add the sifted flour. Once the flour is mixed in, pour in vegetable oil.
- Chicken egg: 2 pieces
- Salt: 1 teaspoon
- Boiling water: 250 ml
- Milk: 250 ml
- Wheat flour: 170 g
- Vegetable oil: 2 tablespoons

2
Bake pancakes on a hot skillet greased with melted butter (use very little butter, moisten half a potato in the butter and grease the skillet with it). Pour a little batter: to make the pancakes lacy.
- Melted butter: 20 g

3
Spread Nutella® on each ready pancake and fold them in quarters.
- Nutella®: 30 g

4
Place 4 pancakes on a plate and decorate with berries.
- Fresh berries: to taste
