The 'Lenten' coffee pie is a refined dessert born from the traditions of Russian cuisine, where even during fasting days one does not refuse small joys. The aroma of freshly brewed coffee fills the dough with depth and richness, while ground peanuts add softness and a delicate nutty note. Honey provides sweetness without being cloying, and baking soda makes the pie airy and light. It is perfect for tea time, especially when you want to enjoy something cozy and warming. It can be served as a standalone treat or paired with light berry jam. Its uniqueness lies in its simplicity of preparation while offering a richness of flavor nuances. This pie is an excellent choice for those seeking a delicious alternative to traditional baked goods without dairy products and eggs.

1
Prepare 1 cup of coffee water (1 teaspoon of instant coffee per 1 cup of water).
- Instant coffee: 1 tablespoon
- Peanut: 1 glass
2
Prepare 1 cup of ground nuts (grind salted peanuts in a blender/chopper almost to flour consistency. But you can leave some small nut fragments for better taste)
3
Sift 1 cup of flour to the brim (+ 1 or 2 tablespoons of flour just in case), this will make the dough airier).
- Wheat flour: 1.5 glass
4
Dissolve honey and sugar well in a glass of warm coffee water, add the rest of the ingredients, and finally add baking soda. The dough should have the consistency of sour cream. If it's too runny, add 1 or 2 tablespoons of flour.
- Honey: 2 tablespoons
- Sugar: 1 tablespoon
- Soda: 1 teaspoon
- Wheat flour: 1.5 glass
5
Grease the baking pan with vegetable oil and sprinkle with semolina. Or line it with parchment.
6
Bake at 180 degrees for 40-50 minutes.
