Classic onion soup is a gem of French cuisine that originated in the old taverns of Paris. Its humble ingredients transform into an exquisite dish with a deep, sweet-caramel flavor that perfectly complements the rich broth. The delicate texture of caramelized onions and crispy bread with melted cheese create a harmony of taste that is warming and comforting. This soup is often served as a cozy winter dish, but its elegance allows it to take a place on festive tables as well. It beautifully reveals the aroma of cognac, adding a light spiciness. Onion soup is not only nourishing but also symbolizes the art of turning simple ingredients into a culinary masterpiece. It is perfect as a standalone dish or as part of an exquisite dinner with a glass of white wine.

1
Pour olive oil into the pot and heat it over medium temperature.
- Olive oil: 2 tablespoons
2
Add all the uncut onion in circles, along with salt, sugar, and pepper until it becomes translucent.
- Onion: 4 pieces
- Salt: 0.5 teaspoon
- Sugar: 0.5 teaspoon
- Ground black pepper: to taste
3
Reduce the temperature to the lowest level and let it simmer for about 1.2 hours, stirring occasionally. It is ready when the onion mixture has caramelized and turned golden-brown.
4
Add all the broth and cognac or brandy, stirring until it comes to a boil so the broth mixes and turns brown.
- Meat broth: 4 glasss
- Cognac: 3 tablespoons
5
Let's take it off the heat, as the soup is almost ready.
6
Pour the soup into ceramic plates or pots and place a thick slice of previously prepared bread (toasted under the grill or in a toaster) on top of each, generously sprinkled with cheese, and send it to the oven on grill for 5 minutes to melt the cheese and turn golden-brown.
- Crackers: 400 g
- Cheddar cheese: 1 glass
