Clean the onion and chop it into small cubes. Peel the carrot and grate it on a coarse grater. Fry in a pan. When to add the finely chopped large clove of garlic.

Transfer the undercooked onion, carrot, and garlic from the pan to the pot. Cut the red bell pepper into cubes and add it to the same pot. Start to stew.

Add diced tomatoes and sauté. Then dilute tomato paste with water and add a pinch of dried oregano. Continue cooking for another 5 minutes with a bay leaf.

Remove the bay leaf. Blend the soup into a cream using a blender. Add salt and red pepper to taste. Add finely chopped parsley leaves.
