Milk cabbage soup in Finnish style

The cabbage soup is prepared according to the principle of the most famous Finnish soup - lohikeito, only instead of pieces of salmon, fresh cabbage is used. Otherwise, it is the same milk broth without a drop of water, from which the cabbage shows unprecedented tenderness, and a simple vegetable dressing. An excellent recipe for every day, if you are already tired of all the standard cabbage soup recipes. Milk can be replaced with low-fat cream - for satiety and thickness.

Chop the cabbage and put it to boil in a minimal amount of water.
- White cabbage: 200 g

Cut the potatoes and carrots into strips and add them to the cabbage. Cook until almost done.
- Carrot: 2 pieces
- Potato: 3 pieces

Pour milk into the almost ready soup and add salt. Important: when the milk is heated but before it foams, add the butter!

- Butter: 1 tablespoon
