In a deep skillet, sauté the leek until soft; if you're cooking with pepper, sauté it together with the red pepper.
- Leek: 1 piece
- Red chilli pepper: 1 piece

Add tomatoes and most of the basil leaves. Keep on the heat for 5-10 minutes.
- Tomatoes: 600 g

Add vegetable broth, season with salt and pepper, and bring to a boil again.

Pour out the pieces of bread and hold over the fire for 2 minutes.
- White bread: 500 g

Remove from heat, cover with a lid, and let it sit for an hour.

Thoroughly mix, pour into plates, dress with olive oil, and sprinkle with basil (remember that if the leaves are chopped, they will lose some aroma, they should be torn by hand). Add crushed garlic to taste.
