Finely chop shallots, parsley, and chives. Also, chop the capers and small gherkins.

In a container, whisk the yolk, wine vinegar, and mustard with a mixer, gradually adding vegetable oil. Whisk for 2-3 minutes until it reaches the consistency of thick mayonnaise (which is what we prepared).

- Mustard: 1 teaspoon
- Vegetable oil: 100 ml

Add onion, capers, gherkins, and herbs to the prepared mayonnaise. Season with salt and pepper to taste. Mix everything well.
