Its history began in the 1920s when a unique sauce was created in Costa Rica with a harmonious balance of sweetness, acidity, and mild spiciness. Remove the stems of the chili and cut them in half lengthwise.
- Dried chili peppers: 2 pieces

Remove the seeds, only the pulp should remain.

Heat the pan (cast iron or stainless steel) over medium heat.

Place the chili pieces in the pan and fry, turning, for 2 minutes.

Add water and reduce the heat, simmer for about 5 minutes.
- Water: 1.5 glass

Next, place the chili pieces in the blender and blend.

Measure 1 cup of the water used to cook the chili and add it to the blender.

Add onion, carrot, sugar, lemon juice, vinegar, salt, molasses, and vegetable broth (optional).
- Yellow onion: 0.5 head
- Carrot: 1 piece
- Sugar: 2 tablespoons
- Freshly squeezed lemon juice: 2 tablespoons
- Vinegar: 1 tablespoon
- Salt: 2 teaspoons
- Molasses: 2 teaspoons
- Vegetable broth: 2 teaspoons

Grind everything to a puree consistency.
