Boil the shrimp until cooked, then drain the water. Chop about half (a little less) into medium pieces, and put the rest in a blender.

If you have an immersion blender, chop the mint separately first.

Add cream, mint, cheese (not necessarily Roquefort, any spicy cheese or even feta) and shrimp to a bowl (or blender), and blend until smooth. If you want the sauce to be thinner, you can use more cream (cream can be replaced with whole milk).
- Cream 20%: 400 ml
- Fresh mint: 1 g
- Roquefort cheese: 100 g
- Peeled shrimp: 400 g
