In a saucepan, heat olive oil over medium heat. Add finely chopped onion, finely chopped and seeded peppers, and minced garlic. Sauté, stirring, for 3-4 minutes until the onion is soft.
- Extra virgin olive oil: 2 tablespoons
- Onion: 240 g
- Fresh chili peppers: 2 pieces
- Habañero pepper: 4 pieces
- Garlic: 4 cloves

Slightly reduce the heat and add finely chopped tomatoes, vinegar, and salt. Then add sugar to taste and cook for about 5 more minutes, stirring, until the tomatoes are soft.
- Tomatoes: 500 g
- Vinegar: 1 glass
- Salt: 2 teaspoons
- Sugar: 3 teaspoons

Transfer the mixture to a blender and blend until pureed. Then strain through a sieve and cool.
