The dressing made from roasted garlic, soy sauce, and ginger is a true embodiment of the depth of Chinese cuisine. Historically, garlic and ginger have been used in Asian gastronomy as key ingredients that add richness and expressiveness to dishes. The flavor of the dressing is a harmonious blend of sweet caramelized garlic, spicy ginger, and umami notes from soy sauce. Its velvety texture and rich aroma make it ideal for marinating meat, dressing salads, or adding depth to vegetable dishes. Sesame oil adds a subtle nutty note, while lime and vinegar provide a pleasant acidity that balances the taste. This dressing not only complements dishes but transforms them into true culinary masterpieces.

1
Preheat the oven to 200 degrees.

You will need 1 large head of garlic or 2 small ones. Remove the outer skin, leaving it only on the cloves, but do not damage the integrity of the head. Cut off the top of the head, slightly trimming the tops of the cloves. Place on a sheet of foil and drizzle with 1 tablespoon of olive oil. Wrap it up and send it to the oven for 40 minutes to 1 hour, until the garlic is very soft. Unwrap and let it cool slightly.
