Olivier from Pushkin

This Olivier, the recipe for which was shared with us by the permanent chef of "Cafe Pushkin" Andrey Makhov, consists of two parts: the first is homemade Olivier with chicken breast, and the second is Olivier, close to the description in the 1895 cookbook, with beef tongue and hazel grouse.

The salad 'Olivier' consists of two parts. The first: boil the eggs and cut them into small cubes. Boil the potatoes until ready and also cut them into cubes.
- Boiled potatoes: 30 g
- Chicken egg: 1 piece

Boil the chicken breast in slightly salted water and chop it finely. Mix all the ingredients (potatoes, eggs, smoked chicken, boiled chicken breast, peas). Dress with mayonnaise and tomato sauce (can be replaced with ketchup).

Second: a recipe close to the description in a 1895 cookbook. Boil the tongue. Gather a vase from endive leaves, layer in sliced cucumbers, boiled tongue, gherkins, fried partridges, boiled eggs, generously pour with mayonnaise, and sprinkle with paprika.
