To make mayonnaise: whisk mustard with egg yolks using a mixer, add a pinch of salt, white pepper and gradually add vegetable oil; add a bit of lemon juice at the end. The mayonnaise is ready. Cut the apple into small cubes and add it to the mayonnaise along with finely chopped shallots, green onions, dill and grated eggs. Add salt, white pepper and mix.
- Mustard: 1 tablespoon
- Egg yolk: 2 pieces
- Salt: to taste
- Ground white pepper: to taste
- Vegetable oil: 200 ml
- Apple: 2 pieces
- Shallots: 80 g
- Chives: to taste

Add a little mayonnaise sauce to the chopped carrots and mix. Do the same with the potatoes and beets.
