Soak dried apricots and prunes in hot water for five minutes to soften them, adding walnuts in the last minute to keep them clean and crumb-free.

First, place chopped beetroot in a salad bowl (I used ready-made 'white dacha' beetroot), then cut cheese, dried apricots, and prunes into large pieces on top, and add nuts. Then drizzle with honey. Wait at least half an hour for the beetroot to release juice under the weight of the other ingredients, and then mix lightly.
