Ministerial salad with chicken breast and egg pancakes

Peel the onion and cut it into thin strips.

Add olive oil and butter to a cold pan (I add butter for a pleasant taste and golden color to the onion).

Add chopped onion to the heated pan. Fry for 1-2 minutes over high heat until golden brown.

Reduce the heat and continue to sauté the onion on low heat until soft.

We place the onion to cool in a salad bowl. We keep the pan heated for the egg pancakes.

Preparing the mixture for egg pancakes: 3 eggs + 3 tbsp of broth in which the chicken was boiled + salt, black pepper (to taste), whisk the mixture.

In a heated pan, pour the egg mixture in portions. Cook like regular pancakes on both sides until golden brown. This yields 4-5 thin egg pancakes, depending on the size of the pan.

We roll each pancake into a roll and let it cool a bit. We cut the rolls into thin strips. We add them to the bowl with the onion.

Shred the chicken breast into fibers. Add to the salad bowl.

Prepare the dressing for the salad: 1 tsp of mustard and mayonnaise, you can add a bit of freshly ground black pepper, mix.
