Warm salad with arugula and olives

Light salad with arugula, avocado, olives and lemon juice. A handful of cooked cereals adds solidity to the salad.

Rinse the millet well in cold water. Pour in 400 ml of water and bring to a boil. Reduce the heat and cook the millet until done for about 15 minutes.

Grate the carrot on a coarse grater. Remove the pits from the olives and cut them into quarters. Dice the avocado. Add arugula.

Mix the juice of half a lemon and the other dressing ingredients in a bowl.
- Lemon juice: 15 ml
- Extra virgin olive oil: 3 teaspoons
- Mustard: 0.5 teaspoon
- Soy sauce: 2 teaspoons
- Honey: 1 teaspoon

Place the cooked millet in a salad bowl. Pour the dressing over it and mix well. The millet should absorb the dressing well. Add the other prepared ingredients to the millet, mix, and serve the salad hot immediately.
