Spring salad with wild garlic and cottage cheese

Recipe author <a href="http://arborio.ru/">Alexey Onegin</a>. Wild garlic goes wonderfully with young radishes: both have a slight spring pungency. The cottage cheese prescribed in this recipe should be dry: the salad already has an oil dressing.

Wash the ramson and chop it with a sharp knife: large for the leaves and finely for the stems. Add radish cut into wedges, cucumber into slices, and pepper into cubes. Prepare the dressing by mixing vegetable oil (olive, flaxseed, or Kuban sunflower) with lemon juice, season generously with salt and pepper, and add to the salad.
- Wild garlic: 1 bunch
- Radish: 7 pieces
- Sweet pepper: 1 piece
- Cucumbers: 1 piece
- Olive oil: 3 tablespoons
- Lemon juice: 1 tablespoon
- Salt: to taste
- Ground black pepper: to taste

After mixing the salad well, transfer it to plates and top with cottage cheese. Drizzle with the remaining dressing and serve. Optionally, you can add green onions or dill, but wild garlic works fine on its own.
