Raw vegan Olivier is a modern interpretation of the classic Russian salad, adapted for health-conscious eaters. Instead of traditional potatoes and mayonnaise, it uses sweet potato and a unique raw vegan sauce made from cashews, garlic, and dates. This salad harmoniously combines the sweetness of sweet potato, the tanginess of pickles, and the freshness of celery to create a rich and balanced flavor. Lemon juice adds a slight acidity while sea salt enhances the main flavor notes. It’s perfect for festive tables or light lunches, energizing the body without heaviness. This Olivier is not only healthy but also surprises guests with its originality, offering a new take on a beloved dish.
