Zest the lime and squeeze the juice. Cut the watermelon into 6 discs, each 10 cm in diameter and 2.5 cm high.

Prepare the dressing by mixing lime juice and zest with black pepper, ginger, and olive oil. Salt the watermelon slices, drizzle them with half of the prepared dressing, and sprinkle with half of the mint and cilantro.

Thinly slice the radish and mix it with the remaining mint and coriander, add arugula leaves and peanuts. Drizzle with the remaining dressing and toss.

Place a 10 cm diameter culinary ring in the center of the serving plate. Lay a disc of watermelon at the bottom, then 1/3 of the arugula and radish mixture, cover with a second watermelon disc, and remove the ring. Use 1 teaspoon of capers to garnish the salad. Prepare two more portions similarly.
