Pour couscous into a bowl and cover with boiling water, twice the volume. Cover with a lid and let it sit for 10 minutes.
- Couscous: 225 g

Mix the couscous with a fork and add chopped herbs, finely chopped red onion, grated lemon zest and juice, peeled and seeded finely chopped cucumber, seeds, sesame, and olive oil. Season with salt and pepper. Mix everything well and let it sit for 30 minutes.
- Parsley: 1 bunch

- Roasted sesame: 30 g
