Zucchini stewed in a steamer

35 minutes
Steamed zucchini is a light and aromatic dish of Russian cuisine, harmoniously combining the tenderness of zucchini and the sweet note of carrots. This cooking method makes the vegetables soft while preserving their beneficial properties and natural taste. The addition of spices and wine vinegar gives the dish a slight piquancy and depth of flavor. Historically, stewed vegetables were widely used in Russian cuisine as they are easy to prepare and perfect for healthy eating. This dish can be served as an independent light snack or as a side dish to meat and fish dishes. It pairs especially well with rye bread or fresh herbs. After steeping, the flavor becomes even richer, allowing each ingredient to fully unfold.

1
Wash the zucchini and carrots. You can peel the zucchini or leave the skin on. Be sure to peel the carrots and remove the tail.
- Zucchini: 400 g
- Carrot: 1 piece
2
Cut the zucchini in half, then halve the halves again, and then cut across to make quarter circles. Grate the carrot or blend it in a blender.
3
Transfer to a steamer (the one without holes in the bottom). Stir, add spices and vinegar to taste, and stir again.
- Spices: to taste
- Wine vinegar: to taste
4
Cover with a lid, let it cook for half an hour. After cooking, transfer to a storage container. Let it steep. The longer it sits, the tastier the dish will be.
