Gluten-free cheese pizza on flatbreads is a unique variation of the classic Italian dish created for those avoiding gluten but wanting to enjoy its flavor. The base consists of soft flatbreads made from a gluten-free mix, with added oats and flaxseeds for density and a light nutty note. The filling combines the spiciness of olives and olives, the aroma of fresh basil, and the richness of melted cheese. A yogurt and garlic-based sauce highlights the rich flavor of the ingredients, while a final touch of olive oil gives the dish a silky texture. Let's make dough for the flatbreads on which we will make pizza. We take a gluten-free pancake mix, prepare the pancakes as indicated on the package (mix water/milk with vegetable oil, add the pancake mix, stir to avoid lumps, and cook on a well-heated pan). I added oats and flaxseeds to the dough to make the pancakes a bit thicker, resembling a tortilla flatbread.
- Gluten Free Baking Mix: 350 g
- Water: 450 ml
- Vegetable oil: 1 tablespoon
- Oatmeal: 1 teaspoon
- Flax seeds: to taste

While we prepare the filling, we will preheat the oven to 180 degrees.

The filling can vary; in my case, it's chopped olives and black olives, grated cheese, and it's even better to take several types, tearing basil leaves.

We place our filling on the ready flatbreads we made in the pan, starting with the sauce, then olives, black olives, cheese, and finish by sprinkling with basil.
