We take a gluten-free pancake mix, prepare the pancakes as indicated on the package (mix water/milk with vegetable oil, add the pancake mix, stir to avoid lumps, and cook on a well-heated pan). I added oats and flaxseeds to the dough to make the pancakes a bit thicker, resembling a tortilla flatbread.
