Preheat the oven to 230 degrees with a pizza stone or baking tray.

Carefully take out the hot pizza stone and sprinkle it with polenta. Also sprinkle polenta on the work surface and rolling pin, and roll the dough into a 25 cm circle. Then stretch the dough by hand from the center, pressing the edges with your fingertips - it doesn't have to be a perfect circle, but it should be thin enough.
- Polenta: to taste
- Pizza dough: 500 g

Place the dough on the stone. Quickly spread ricotta over the base, layer sliced mozzarella, intersperse pieces of gorgonzola, and sprinkle with grated parmesan.
- Ricotta cheese: 60 g
- Mozzarella cheese: 50 g
- Gorgonzola cheese: 50 g
- Parmesan cheese: 25 g

Place the pizza in the oven on the top rack for 10-12 minutes until golden brown and with a crispy base. Check the dough's readiness by gently lifting the edges. Transfer to a plate and serve immediately.
