Pasta with seafood, herbs and garlic in tomato sauce

A seafood cocktail of mussels, shrimp and clams is perfect for this dish.

Cooking method: immerse seafood in warm water and set aside for 20 minutes. Clean and rinse the shrimp if you are preparing them separately from the seafood cocktail.
- Seafood cocktail: 750 g
- Spaghetti: 300 g

In a medium pot, heat 3 tbsp of olive oil, add finely chopped onion and garlic, and sauté until soft (about 4 minutes). Prepare the chopped tomatoes in advance and add them to the onion-garlic mixture over the heat, stirring gently.
- Olive oil: 6 tablespoons
- Onion: 1 piece
- Garlic: 2 heads
- Tomatoes: 2 pieces

Season the mixture with salt and pepper, then add wine and tomato paste. Let it simmer on medium heat covered for 15 minutes.
- Sea salt: pinch
- Freshly ground black pepper: pinch
- Dry white wine: 125 ml
- Tomato paste: 50 g

Meanwhile, heat the remaining 3 tablespoons of olive oil in another pot and add the seafood to the boiling oil. Sauté evenly for 5-7 minutes, carefully watching to prevent the seafood from burning. Set aside to cool in a separate bowl.

In a larger pot, bring water to a boil, add a little salt, and cook the spaghetti for the time indicated on the package.
- Spaghetti: 300 g

Save a glass of the water in which the pasta was cooked for the sauce. Drain the cooked pasta, then return it to the pot and put it back on the heat. Pour the tomato sauce, the glass of pasta water, and finally the seafood into the cooked spaghetti. Stir on the heat before serving.

When serving, ensure that each plate contains all types of seafood from the cocktail or mix, and be sure to sprinkle with fresh parsley and parmesan.
