Spaghetti crudo al tonno
2 servings
20 minutes
Spaghetti crudo al tonno is a light yet exquisite Italian dish that combines the freshness and rich flavors of Mediterranean ingredients. Crudo, meaning 'raw', emphasizes the freshness of the sauce focused on meaty tomatoes, aromatic green onions, and tender tuna texture. Capers add a tangy note while basil provides a refreshing herbal palette. The sauce is not cooked, preserving the brightness of flavors and juiciness of ingredients. This combination first appeared in Italy's coastal regions where fresh products are used close to their natural state. This dish is perfect for warm summer evenings when you crave something hearty yet light. It is served with parmesan or grana padano for added depth of flavor.

1
Prepare the tonno crudo sauce. Cut the tomatoes into 1 cm cubes. Meaty varieties or cherry tomatoes are best for this dish.
- Tomatoes: 2 pieces
2
Cut the green onion into pieces about 2 cm long. (Tip - it's best to use young green onions with a small white bulb, but if you can't find that, use regular green onions)
- Green onions: 5 stem
3
Chop the basil coarsely (it can be omitted). You can use the julienne method or any other convenient way.
- Basil: to taste
4
Mix tomatoes, onion, basil, and capers (without juice) in a salad bowl.
- Tomatoes: 2 pieces
- Green onions: 5 stem
- Basil: to taste
- Pickled capers: 1 tablespoon
5
For this dish, it's best to use tuna in glass jars where the fish's structure is visible. Honestly, it also tastes better than in tin cans.
6
Drain the oil from the tuna can and break it into large pieces by hand into the tomato mixture. Season with salt and pepper to taste and gently mix.
- Canned tuna in oil: 200 g
- Salt: to taste
- Ground black pepper: to taste
7
Boil the spaghetti according to the package instructions until al dente.
- Spaghetti: 250 g
8
Drain the water from the spaghetti and place it on plates, then top with crudo sauce.
9
For those who believe that fish sauce pairs well with cheese, freshly grated parmesan or grana padano can be sprinkled on top.
