Cheese pie with tomatoes is a refined combination of creamy dough, gooey cheese, and aromatic tomatoes. This recipe hails from European cuisine where simple yet quality ingredients create a unique flavor. The base made of flour, butter, and cheese gives the pie a tender, crispy texture while the filling of caramelized tomatoes and onions adds juiciness and a hint of honey's sweetness. Thyme and black pepper add exquisite spice that highlights the depth of flavor. This pie pairs perfectly with a glass of wine and a fresh salad, enhancing both everyday meals and festive gatherings. It can be served warm or slightly cooled to enjoy the harmony of flavors and rich aroma.

1
Preheat the oven to 175 degrees.
2
Mix all the filling ingredients (tomatoes, onion, oil, honey, salt, pepper, 1 teaspoon of thyme) in a bowl and set aside for a while.

- Shallots: 3 pieces
- Olive oil: 1 tablespoon
- Honey: 2 teaspoons
- Salt: 0.5 teaspoon
- Ground black pepper: to taste
- Chopped fresh thyme: 1.5 teaspoon
3
Cut the butter into small cubes and rub it with the flour using your fingers. Add cheese, 0.5 teaspoons of thyme, and 0.5 teaspoons of salt. Mix to avoid lumps.
- Butter: 110 g
- Wheat flour: 1 glass
- Cheese: 220 g
- Chopped fresh thyme: 1.5 teaspoon
- Salt: 0.5 teaspoon
4
Place in the pie form. Pack tightly.
5
Spread the filling on top. Bake for about an hour until golden-brown crust forms.
6
Cool for about 10-20 minutes. Carefully remove the pie from the mold, as the base is very delicate and may start to crumble.
