The main secret of pizza is simple - quality ingredients. Instead of those cheeses that are used in the recipe, you can take others - those that you like yourself. It is only important that they have different tastes - for the sake of that interesting result that their harmonious ensemble will ultimately give .

Prepare all the ingredients. Preheat the oven to 250 degrees.

Grease a small baking dish (about 20×30 cm) with a spoonful of olive oil, place the dough in it, and stretch it from the center to the edges: it should form a bumpy sheet.
- Olive oil: 1 tablespoon
- Pizza dough: 500 g

Let the dough sit in a warm place for fifteen to twenty minutes — for example, on a stove with the oven already on: the yeast will continue to work and make the dough porous.

Place the dough in the oven for five minutes to dry it a little.

Cut mozzarella (not balls in brine, but firm, dry cheese - specifically for pizza), Emmental, and Gorgonzola (which can be replaced with any other blue cheese) into small cubes.
- Mozzarella Cheese for Pizza: 200 g

Grate the Parmesan cheese.
