    First the dough! Mix flour, salt, and yeast. Sift 2-3 times. Add sugar and mix. In a separate bowl, beat the egg, add water and olive oil, and mix. Gradually add the liquid to the flour, first with a fork, and when everything is added, knead a firm, homogeneous dough with your hands. Place the dough in a bowl, cover with a towel, and leave in a warm place for 40 minutes.

    We wash the squid, dry it with a towel, cut part into pieces, and part into rings. Boil the squid without spices for 2 minutes after boiling — NO MORE! Drain the water.

    Tomato sauce can be bought or made. I take a few tomatoes, peel them, and blend them with one onion and three cloves of garlic. We add salt, pepper, dried (or fresh) oregano, a bit of thyme, and rosemary, pour in some water, and let it simmer on low heat for at least an hour. The sauce should reduce in volume by about half.

    We knead the risen dough, roll it into a circle or the shape of the baking tray, fold the edges inward, and create borders. We generously spread the dough with sauce. Then we layer: mozzarella, sliced olives, squid, shrimp, and green onions. Sprinkle everything with parmesan and drizzle with lemon juice.
