Pizza with blue cheese and pear

A traditional combination, tested by generations, is pear and blue cheese. Italians have long since transferred this universal wine snack to dough as if it were a plate - it's more filling.

For the test — mix flour, water, olive oil, salt, and yeast. Knead the dough and let it rest in a warm place for 30 minutes. You need 150 g of dough for one pizza.
- Wheat flour: 300 g
- Water: 150 ml
- Olive oil: 3 ml
- Salt: 5 g
- Dry yeast: 3 g

It should be rolled out on a floured surface to a thickness of 1.5 mm. Then, place 120 g of pre-grated mozzarella and small pieces of gorgonzola on the rolled dough. The main thing is not to buy fresh mozzarella for this purpose: it won't be possible to grate it, so you need to choose firm mozzarella suitable for pizza.
- Mozzarella cheese: 120 g
- Gorgonzola cheese: 100 g

Now it is necessary to send the pizza to an oven preheated to 180 degrees for seven to ten minutes. One must remain vigilant and check the pizza for readiness. The dough should brown but not burn, and the cheese should melt but not turn into a crust.

Once the pizza looks ready, you can take it out. Use a tablespoon to spread the melted gorgonzola pieces so that the entire surface of the pizza is covered with a thin layer of cheese. The crust can be left without cheese, or not, at your discretion.

Then you need to peel the fresh pear. It's better to use a vegetable peeler, but if you don't have one, you can do it with a knife. In this case, be very careful to minimize damage to the pear's flesh.

Slice the pear into thin rounds using a sharp knife, preferably a mandoline or slicer. The last two produce even and thinnest rounds, which is what is needed. The core in conference pears is not so tough that it needs to be cut out. The only thing to remove is the seeds if they are encountered while slicing.

Cover the entire surface of the pizza with circles. Strict geometric principles are not followed here, so feel free to use your imagination: arrange circles, zigzags, or squares from pears.

Cut the pizza into six pieces. It's better to do this with a pizza cutter (it has the most suitable handle for this purpose, and the blade is serrated) — the pieces will be even and neat, and most importantly, it will take minimal effort.
