Fried pasta with stewed tomatoes is a simple yet exquisite dish of Armenian cuisine, filled with the warmth of home. This tradition dates back to times when every housewife aimed to create a hearty and aromatic treat from available ingredients. Golden pasta soaked in oil gains a crispy texture, while tomatoes stewed in butter add a gentle tang and freshness to the dish. Topped with onions, they create a harmony of flavors—from deep richness to refreshing lightness. This dish pairs perfectly with meat dishes or can be served as a standalone hot appetizer. It is nutritious, warming, and simultaneously light, making it an excellent option for family dinners or cozy evenings.

Prepare the ingredients.

2
Pour oil into the pan and heat it over medium heat.
- Vegetable oil: to taste

3
Pour in the pasta and mix to coat all the pasta in oil.
- Pasta: 300 g

4
Fry until golden brown, stirring constantly.

5
Pour a glass of water and stir, preventing the pasta from sticking together.

6
Salt and pepper.

7
Cover with a lid and make a small fire.

Pasta should be soft and there should be no water left. If the pasta is ready but there's still water, open the lid and increase the heat slightly to evaporate the excess water. If the pasta is not ready and there's no water left, add a little water and cook until done.

9
Cut the tomato into large pieces.
- Tomatoes: 1 piece

10
Sauté the tomatoes in heated butter. Place them on top of the cooked pasta. Sprinkle with chopped onion.
