Prepare the necessary ingredients.

Pour water over the meat and bring to a boil. Skim off the foam and reduce the heat to minimum.
- Veal: 1 kg

Add carrot, celery, and onion to the broth.
- Carrot: 1 piece
- Celery root: 150 g
- Onion: 1 piece

Add dill stems, bay leaf, and peppercorns. Boil for one and a half to two hours.
- Dill: 70 g
- Bay leaf: 3 pieces
- Black peppercorns: 5 piece

Strain the broth, cut the meat into 3 cm cubes.

Put 500 ml of broth back on the heat and reduce it by half.

Add cream, salt, pepper, sugar.
- Cream 35%: 300 ml
- Salt: to taste
- Ground black pepper: to taste
- Sugar: 1 teaspoon

Add vinegar and mix. Taste and add more salt if necessary.
- Vinegar: 1 tablespoon
- Salt: to taste

Add meat and dill, heat it up, and remove from heat.
- Veal: 1 kg
