Vegetable pancakes with smoked salsa

Bake the peppers in the oven.

To prepare salsa, first preheat the oven to 200 degrees. Place the tomatoes on a baking sheet and season with salt, pepper, sugar, and vinegar with oil. Bake for 20 minutes and set aside to cool.
- Cherry tomatoes: 200 g
- Salt: to taste
- Ground black pepper: to taste
- Sugar: 0.5 teaspoon
- Lemon juice: 3 tablespoons
- Olive oil: 2 tablespoons

Place the tomatoes in a blender and chop with pepper, chili, and paprika.

Grate all the vegetables and place them in the center of a clean kitchen towel. Squeeze out as much liquid as possible from the vegetables and transfer everything to a bowl. Season with spices, lemon juice, and oil.

Form small patties from the vegetable mixture and fry in oil for 5-10 minutes on each side.
