Homemade steak is the perfect dish for true meat lovers. Its roots trace back to British cuisine, where meat has always held a prestigious place. This recipe allows the natural flavor of beef tenderloin to shine through, enhanced by the aroma of rosemary, thyme, and oregano. Initially cooked on a hot grill pan and then perfected in the oven, the steak develops an appetizing crust while retaining its juiciness inside. Olive oil makes it tender, while spices add richness and zest. The main rule is to add salt only before serving to keep the meat tender. It can be served with a side of roasted vegetables or a fresh salad to highlight the depth of flavor. Rinse the meat under cold running water, dry it with a paper towel, and trim off the membranes.
- Beef tenderloin: 800 g

Cut the meat across the grain into steaks 2-3 cm thick. Brush the steaks with olive oil, sprinkle with pepper and herbs. Do not salt! Cover the bowl with the steaks with plastic wrap and let them sit at room temperature for 2 hours.
- Olive oil: 8 tablespoons
- Ground black pepper: to taste
- Rosemary: pinch
- Thyme: to taste
- Oregano: pinch

Preheat the cast iron grill pan and sear the steaks in a dry pan (the meat is already oiled) for 3-4 minutes on each side until a golden crust forms, which will prevent the meat juices from escaping.

Preheat the oven to 180°C. Place the fried steaks on a baking sheet lined with foil and put them in the preheated oven for 10-15 minutes.

Remove the steaks from the oven and let them rest for 5-10 minutes. This will help retain the juices when slicing.
