Mix olive oil, grated zest of half a lemon, and thyme.
- Olive oil: 4 tablespoons
- Lemon: 0.5 piece
- Thyme: 1 teaspoon

Clean and cut the mackerel. Salt and pepper inside and out, rub with part of the olive oil mixture. Place slices of onion and lemon (about 3 slices of lemon, the same amount of onion, not rings!!! but slices) inside the fish, tie the mackerel with string. Let the fish rest for half an hour.

At this time, cut the mushrooms into quarters, the remaining onion into large pieces, divide the leftover lemon into 2 parts, and slice the carrot lengthwise using a vegetable peeler. Season all the vegetables with salt and pepper to taste, and mix with a blend of oil, zest, and thyme.

Preheat the oven to 180 degrees.

Evenly distribute all the vegetables in a baking dish, place lemon wedges around the edges, roll the carrot strips into small tubes as shown in the photo, and place them between the vegetables (to prevent them from unraveling). Lay the mackerel on top of this mixture (so it doesn't stick to the dish) and send it to the oven for 20-25-30 minutes (depending on the oven's capabilities).
