Cut the beef into small pieces along the fibers.

Season the beef with freshly ground pepper and salt, coat it in flour, shaking off the excess.

Heat olive oil and butter in a suitable non-stick pan of adequate size.

Brown the meat on all sides and place it on a paper towel.

Finely chop the garlic and add it to the oil in which the meat was fried.

Reduce the heat to medium and sauté, stirring for about 1 minute.

Add white wine vinegar and after 1 minute return the meat and pour in white wine.

Bring to a boil, add beef broth (warm), add salt and pepper.

Reduce the heat to below medium and stir until the sauce thickens for about 30-40 minutes.

Add freshly chopped parsley 5 minutes before it's done.
