Turkey shashlik with cranberry sauce

For the turkey, mix yogurt, olive oil, finely chopped thyme, crushed garlic, 1 teaspoon of honey, juice and zest of half a lemon, 1 teaspoon of salt, and freshly ground black pepper in a large bowl.
- Natural yoghurt: 100 ml
- Olive oil: 1 tablespoon
- Fresh thyme: 1 sprig
- Garlic: 2 cloves
- Honey: 3.5 tablespoons
- Lemon: 0.5 piece
- Salt: 1.3 teaspoon
- Freshly ground black pepper: to taste

Rinse the turkey, dry it with paper towels. Marinate for 12 hours.

Preheat the oven to 200°C.

Remove excess marinade, cut the meat into pieces and thread onto skewers.

In a large skillet, fry the kebabs in vegetable oil on all sides until golden brown.
- Olive oil: 1 tablespoon

Wrap in foil and bake for 20 minutes until done.

For the sauce, mix cranberry, brown sugar, 3 tablespoons of honey, water, orange zest and juice, ginger, a cinnamon stick, allspice, and 1/4 teaspoon of salt in a thick-walled pot.
- Cranberry: 400 g
- Brown sugar: 2 tablespoons
- Honey: 3.5 tablespoons
- Water: 125 ml
- Orange zest: 1 teaspoon
- Freshly squeezed orange juice: 60 ml
- Ground ginger: 0.1 teaspoon
- Cinnamon sticks: 1 piece
- Allspice peas: 3 pieces
- Salt: 1.3 teaspoon

Cook over medium heat for 30 minutes. The cranberries should burst.

Remove the cinnamon stick.

Remove the pot from the heat and let the sauce cool completely. The mixture will gradually thicken.
