Sift the flour into a bowl, make a well and pour in 3 eggs, add a pinch of salt and 1 tablespoon of olive oil. Knead the dough.
- Wheat flour: 300 g
- Chicken egg: 4 pieces
- Salt: pinch
- Olive oil: 1 tablespoon

Cover the bowl with a damp cloth to prevent the dough from drying out and leave it for 30 minutes.

We mix ricotta with grated parmesan, add a pinch of salt, black pepper, and nutmeg, the zest of 1/4 lemon, 1 egg, and 1 yolk.
- Ricotta cheese: 200 g
- Grated Parmesan cheese: 30 g
- Salt: pinch
- Ground black pepper: pinch
- Ground nutmeg: pinch
- Lemon zest: 10 g
- Chicken egg: 4 pieces
- Egg yolk: 1 piece

Then we add a piece of soft butter and finely chopped boiled chicken meat. We keep the broth in which the chicken was cooked. We will use it to cook the cappelletti.
- Butter: 1 tablespoon
- Chicken: 150 g

Sprinkle some flour on the work surface and roll out the dough thinly.
- Wheat flour: 300 g

We cut into squares with a side of 5-6 cm.

Place a little filling in the center (about 1/2 tsp), moisten the edges of the squares with cold water, and fold to form a triangle. Wrap the triangle around your middle finger and connect the tips.

Add the cappelletti to the boiling broth and cook until done.
