Khinkali with delicate cheese and mint filling

5 servings

50 minutes

Khinkali with a delicate cheese and mint filling is a refined blend of Georgian traditions and a fresh flavor accent. This recipe is inspired by ancient Caucasian traditions when khinkali were made with various fillings, including meat and cheese variations. In this version, the softness of homemade cheese combines with the refreshing aroma of mint, creating a unique contrast of flavors. The dough is tender and elastic, securely holding the filling while gaining a pleasant density during cooking. Khinkali should be served hot, lightly sprinkled with freshly ground pepper for spiciness. This dish is perfect for cozy family dinners as well as festive gatherings, surprising guests with its unconventional yet harmonious taste.

First, mix the flour with a teaspoon of salt, then add some warm water to form a thick mass, remembering to stir. Wrap the resulting paste, which should be uniform in consistency, in plastic wrap and refrigerate for 40 minutes - until you need it.

Meanwhile, mix cheese, sour cream, cilantro, eggs, and pepper – this will be a tasty filling later. Then divide the dough into 25 equal parts but in a way that makes it easy to put the filling inside; use a small rolling pin for convenience. In each rolled-out flatbread, place 2 tablespoons (or a little less) of filling but ensure nothing spills out from the edges. Then bring all the edges of the flatbread together to seal the filling inside, forming a small knot on top. Repeat the same with the remaining dough parts.
