First, mix the flour with a teaspoon of salt, then add some warm water to form a thick mass, remembering to stir. Wrap the resulting paste, which should be uniform in consistency, in plastic wrap and refrigerate for 40 minutes - until you need it.
- Wheat flour: 4 glasss

Meanwhile, mix cheese, sour cream, cilantro, eggs, and pepper – this will be a tasty filling later. Then divide the dough into 25 equal parts but in a way that makes it easy to put the filling inside; use a small rolling pin for convenience. In each rolled-out flatbread, place 2 tablespoons (or a little less) of filling but ensure nothing spills out from the edges. Then bring all the edges of the flatbread together to seal the filling inside, forming a small knot on top. Repeat the same with the remaining dough parts.
- Homemade cheese: 400 g
- Sour cream: 200 g
- Coriander: 70 g
- Chicken egg: 3 pieces
- Ground black pepper: to taste

Boil water, which should be salted to taste, then immerse the delicious khinkali and boil for about 8 minutes until they float. Drain the water and serve the dish hot. Don't forget to sprinkle with pepper for a spicy taste.
