In a large bowl, mix Shaoxing wine, black pepper, soy sauce, fish sauce, sugar, minced garlic, and chili pepper until the sugar is fully dissolved. Place the chicken wings in the bowl, cover it, and let marinate overnight in the refrigerator.
- Chinese rice wine: 1 tablespoon
- Freshly ground black pepper: 1 teaspoon
- Soy sauce: 2 tablespoons
- Fish sauce: 2 tablespoons
- Sugar: 2 teaspoons
- Garlic: 10 g
- Dried chili peppers: 15 pieces
- Chicken wings: 1 kg

Light the charcoal in the grill. Once all the charcoal has burned, move it to the side. Set up the grill grate, close the grill, and let the grate heat for 5 minutes. Clean and oil the grill grate.

Discuss the wings. Cook the wings on the grill with the lid closed for about 7 minutes. Then flip and cook for another 7 minutes until golden brown.
