In a large dish, mix hoisin sauce, sherry, soy sauce, minced garlic, sugar, food coloring, and Chinese spices. Place the ribs in the marinade, cover with plastic wrap, and let marinate at room temperature for 1 hour.
- Hoisin sauce: 1 tablespoon
- Soy sauce: 1 tablespoon
- Dry sherry: 3 tablespoons
- Garlic: 1 clove
- Sugar: 2 tablespoons
- Red food coloring: 1 teaspoon
- Chinese Five Spice: 0.5 teaspoon
- Pork ribs: 1 kg

Preheat the oven to 180 degrees. You will need 2 baking pans of different sizes. Place the ribs meat-side up in the smaller pan. Pour water into the second pan and place the pan with the ribs in it. It's important that the water doesn't overflow. Bake the ribs this way for 35 minutes, then brush the ribs with marinade, flip them, and bake for another 35 minutes. Add water if necessary.

- Soy sauce: 1 tablespoon
- Dry sherry: 3 tablespoons

Preheat the oven to 220 degrees, flip the ribs again and brush with marinade. Bake for another 20 minutes. Serve the finished ribs with Chinese mustard or another sauce of your choice. Enjoy your meal!
